Lindsay Metcalf grew up on a traditional family farm in Kansas, but she says she had never heard of a vertical farm, where plants are grown in towers indoors.
Such farms are "a relatively new way of producing food," she tells the Midwest Messenger.
"These farms use aeroponics, a form of hydroponics that mists plant roots instead of growing plants in large pools."
Most grow plants under LEDs and in sterile environments.
Metcalf's first book, Farmers Unite: Planting a Protest for Fair Prices, explains the 1970s American farm crisis.
Now her second book, Outdoor Farm, Indoor Farm, will be released in 2024.
It's written as non-fiction and tells the story of the food we eat and how farms are constantly innovating and changing to be of service to others.
"I care a lot about climate change," Metcalf says.
"I have two young kids and I want to do whatever I can to ensure their future on a sustainable planet."
